What is your earliest food memory?
I remember my sister wanting to go to a fancy restaurant for her birthday so we went, I believe it was a 3 rosette restaurant and she was 14 so I would have been 10 maybe? I remember I had rack of lamb for main course and not liking it, oh how times change as you age.
Tell us about your career?
I did a bit of KP and simple cheffing workin my dads kitchen where he was head chef before joining the Specialised chef apprentice scheme in Bournemouth. This then led to me being placed at Claridges hotel in London where I would then spend 10 years in total which gave me some amazing experiences, such as working with NOMA for a 2 week pop up during the olympics.
I did take a bit of a break from cheffing and got an office job but could never get the chef intuition out of my system so then Joined Four Gables in their events team in 2015.
If you could take one chefs knive to a dessert island, which would it be?
Definitely a pastry knife, it covers all bases.
You're at home, what are you cooking for dinner?
Some variant of chicken salad for my wife and some form of reformed nugget and potato for the children.
